    When I create these buttons

    . PayPal Buy Now (New API)
    . Stripe SCA Buy Now

    I don’t have the option for ‘Button image url’

    How can I edit my own buttons images in those cases?

    That option is only available when the payment gateway supports it. The new API of PayPal doesn’t let you specify a button image. Those buttons work little bit different than a traditional PayPal button. The documentation here shows how it looks:
