Hello,
We were wondering if we can “change” the flow of the membership process, so a user will fill in their info and check some checkboxes regarding terms of service, privacy policy, etc…, after that it will be redirected to the stripe payment page. After payment, they will receive a link in order to activate their account and will just need to type in their password so they can logged-in.

Yes, but that one only sends when a user registers for an account, not for an upgrade of their account.
Hi, The upgrade doesn’t do an admin notification at the moment. Normally, an upgrade would be associated with a payment. So the payments menu is a good place to check and see all the upgrades that are coming in. Also, if you want to monitor the upgrades for something for a short while, the following debug log file feature could be helpful:
